Creamy Mushroom Soup


Some of the best mushroom soup I ever had was from Marks & Spencer, a British department store that specializes in clothing, and home products, as well as luxury food products. Their mushroom soup was fresh, rich and creamy, seasoned with garlic and white wine, and so much better (and healthier) than the canned versions I had grown up on!

Being a creative sort, I set out to recreate this delicious soup in my own kitchen and came up with something that was a strong contender for best mushroom soup ever! Yet, these days, I’m living a paleo lifestyle, my old mushroom soup recipe just isn’t going to cut in anymore!

Happily, I’ve been able to create a paleo version that is just as satisfying! My paleo mushroom soup is still creamy and garlicky, but dairy-free and minus non-paleo ingredients. Give my easy, real-food mushroom soup recipe a try and let me know what you think!

Creamy Mushroom Soup

Ingredients

  • 1½ lb baby bella mushrooms, sliced thinly

  • 3 cloves garlic, minced

  • 2 shallots, diced

  • 6 cups bone broth*

  • 1 cup full-fat coconut milk

  • 3 tbsp coconut oil

  • ½ cup fresh parsley, chopped

  • 2 tbsp arrowroot flour

  • ½ cup water

  • salt and pepper (omit for AIP) to taste

Method

  • In a large pot, melt the coconut oil over a medium heat

  • Sauté the shallots for about 3 to 4 minutes, until they begin to soften

  • Add the garlic, sauté for another minute or two

  • Add the sliced mushroom, stirring for about 5 to 8 minutes until they cook down

  • Pour in the bone broth, and bring to a boil

  • Turn down the heat to low, and allow to simmer for about 5 minutes

  • Add the coconut milk, and season with salt and freshly ground pepper to taste

  • Using an emersion blender, puree the soup to desired consistency (I like to leave mine kind of chunky)

  • In a cup or small bowl, blend the arrowroot flour and water until they form a slurry

  • Stir the arrowroot mixture into to the soup, allowing it to simmer so it can thicken the soup

  • Stir in the chopped parsley

  • Serve and enjoy!

*To make a thicker soup for adding to casseroles, use less bone broth, adding a cup at at time until you reach the thickness you want. More arrowroot flour can also be added.
