Lamb Stuffed Acorn Squash

It’s squash season! I love all sorts of squash, but winter squash, like butternut or acorn are my favorite, and are delicious baked, mashed or pureed into a warm, comforting soup! However, after seeing some stuffed squash recipes on Pinterest, I was inspired to create my own, using different ingredients than other recipes I’d seen so far.

So, off to the kitchen to experiment I went, using a pound of ground lamb meat, and other items that were already in my fridge and pantry, I came up with this mouthwatering dish!

My lamb stuffed acorn squash recipe did not disappoint, and adding cinnamon and ginger turned out to be a flavorful compliment to the light sweetness of the baked squash! My husband and I enjoyed this dish so much, we ended up eating all four halves that same evening! I hope you enjoy this dish as much as we do!

Lamb Stuffed Acorn Squash


  • 2 acorn squash

  • 1 lb ground lamb

  • 1 tbsp coconut oil

  • 5-6 cups baby spinach or baby kale

  • 8 oz baby bella mushroom, sliced

  • 3 cloves garlic, minced

  • 1 small onion, chopped

  • 1 tsp dried parsley

  • 1 tsp ground cinnamon

  • 1 tsp ground ginger

  • salt and pepper to taste


  • Preheat the oven to 350º fahrenheit

  • Carefully cut the acorn squash in half and scoop out the seeds

  • Place the squash halves facedown in a baking pan, and add about 1 inch of water

  • Bake the squash for 20-30 minutes or until the squash is getting soft

  • Meanwhile, in a skillet melt the coconut oil

  • Sauté the chopped onions until they start to soften

  • Add the garlic, sliced mushrooms and stir until cooked

  • Next, add the lamb meat, stirring until thoroughly cooked

  • Once the meat is cooked, add the spinach/kale and stir in until all leaves are wilted

  • Add the cinnamon, ginger and parsley, salt and pepper to taste

  • When the squash is ready, drain the water from the pan and turn the squash face side up

  • Stuff the squash with equal amounts of the meat mixture

  • Return the stuffed squash to the oven, baking for another 10 minutes

  • Serve and enjoy!
