Paleo Chewy Chai Spice Cookies


Chai is one of my favorite flavors, combing cinnamon, cardamom, ginger, cloves, nutmeg and black pepper to create an incredibly aromatic spice blend that transforms an ordinary cup of tea into something delicious and comforting on a cold winter’s day! The same goes for adding chai spices to a simple sugar cookie recipe, turning them into a complex, spicy cookie!

I am sure you’re going to love my paleo-friendly version of this mouthwatering chai inspired cookie. Using a blend of almond and coconut flour, this makes for a perfect gluten-free treat that is great for dunking in a piping hot cup of tea, or for the big kid in you, a cool glass of almond milk!

Paleo Chewy Chai Spice Cookies

Ingredients

  • 2 cups almond flour

  • ¼ cup coconut flour

  • ½ tsp baking soda

  • 2 tsp ground ginger

  • 1 tsp ground cinnamon

  • ¼ tsp ground cardamom

  • ¼ tsp ground cloves

  • ¼ tsp ground nutmeg

  • ¼ finely ground black pepper

  • ¼ teaspoon salt

  • ¼ cup coconut sugar

  • ¼ cup coconut oil, melted

  • 2-3 tbsp maple syrup

  • 1 teaspoon vanilla

  • 1 large egg

  • 2 tbsp sugar for rolling (I use raw or coconut sugar)

Method

  • In a large bowl, blend together all the dry ingredients, including almond flour, coconut flour, salt, ginger, cinnamon, cardamom cloves, nutmeg and black pepper; set aside

  • In a medium bowl, whisk together the wet ingredients, including melted coconut oil, maple syrup, coconut sugar, vanilla and egg

  • Next, add the wet ingredients to the dry ingredients, stirring until completely combined and starting to form a ball of dough

  • Allow the coconut flour to absorb some of the moisture, by wrapping it in parchment paper and placing it in the refrigerator to chill for about 20-30 minutes

  • While the dough is chilling, preheat the oven to 350º fahrenheit and line two baking sheets with parchment paper

  • Once chilled, roll the dough into 1 inch balls, then gently roll them in raw sugar, coating them evenly

  • Place the dough balls about 2 inches apart on the prepared baking sheet, gently patting them down to flatten them slightly

  • Bake for 10-12 minutes or until the tops have started to crack

  • Allow to cool completely

  • Serve and enjoy!
