Paleo Beef & Vegetable Noodles

Yes, the title of the recipe does say both ‘paleo’ and ‘noodles’ in the same sentence! However, the aforementioned ‘noodles’ in my recipe are of the kelp variety and are naturally gluten-free and get the paleo rubber-stamp of approval!
Kelp noodles are made from kelp (duh!), an edible seaweed, and are marketed as a gluten-free alternative to the wheat or rice noodles used in many Asian-inspired dishes and soups. Kelp noodles contain nothing more than kelp, sodium alginate (a seaweed-derived salt), and water, and provide a rich source of trace minerals including iodine, a mineral important in thyroid function.
Kelp noodles are easy to use, with no cooking required! They’re an awesome ‘ramen’ substitute in broth based soups, or in stir-fries, like my Paleo Beef & Vegetable Noodles recipe! So, if you like trying new foods, give my recipe a try, and please share your feedback in the comments box below!
Paleo Beef & Vegetable Noodles
Ingredients
1 lb ground beef
½ lb cremini mushrooms, sliced
1½ cups broccoli florets
1½ cup carrots, sliced diagonally
1 small onion, minced
4 cloves garlic, minced
1 12oz packet kelp noodles
1 tbsp coconut oil
1-2 tbsp coconut aminos
1-2 tbsp fish sauce
Salt and pepper to taste
Method
Place the kelp noodles in a colander and rinse under running water, making sure to separate them, set aside
Melt the coconut oil in a skillet, over a medium heat
Add the minced onions and sauté until soft
Add the sliced mushrooms, stirring until they are cooked
Next, add the ground beef and garlic, stirring until the beef has browned and with no more pink
Add the sliced carrots and broccoli florets, and allow to cook for 3 to 5 minutes, depending on how crisp you like your vegetables
Next, add the kelp noodles, stirring carefully to incorporate them in with the other ingredients
Add the coconut aminos and fish sauce, and stir thoroughly
Allow for the noodles to soften and soak up the flavors, about 3 to 5 minutes should be long enough
Finally, taste for seasoning and add salt and pepper as needed
Serve and enjoy!
