Beef & Kale Soup

The air is a turning a little cooler and the leaves on the trees are changing color. These are signs that it’s soup season again… not that I don’t eat soup all year round, I just like having an excuse to make a large, delicious pot of soup for warming up a chilly day!
Loaded with some of my favorite superfoods, this paleo-approved soup recipe pairs chunky beef with the robust flavor of kale, plus the addition of mushrooms and carrots to complete this warm and hearty soup! Using homemade bone broth, eating this nutritious soup can help to fight off those cold weather illnesses that come our way every year around this time!
Beef & Kale Soup
Ingredients
1½ lb. stew beef, cut into cubes
4 cups homemade bone broth
1 tbsp coconut oil
2 bunches kale, sliced thinly, stems removed
2 carrots, sliced diagonally
6 mushrooms, sliced thinkly
1 small onion, sliced
3 cloves garlic, minced
1 tbsp fresh parsley, chopped
1 tsp rosemary, minced
1 tsp fish sauce
½ tsp salt
Method
In a large sauce pan, melt the coconut oil over a medium heat
Add the stew beef, stirring frequently until brown
Remove beef from the pot and set aside
In the same pan, add the onions, cooking until softened and translucent
Add the garlic, carrots and mushroom and cook until they start to soften and the garlic is fragrant
Add the bone broth and bring to a simmer
Return the beef to the pan, add the kale and season with the salt, parsley and rosemary
Simmer until the kale has wilted
Taste and add more salt if necessary
Serve and enjoy!
