Deconstructed Egg Roll (Paleo)

Cravings for Chinese take-out can easily be satisfied with my 'paleo-fied' interpretation of the beloved egg roll by simply removing the gluten! In other words, all of the contents of the egg roll are taken out of the wrapper, and served in a bowl, giving you instead, every bite of the delicious, aromatic flavors of your favorite food!
Crisp cabbage, hearty mushrooms, and chicken all cooked in a garlicky, gingery sauce will fulfill every take-out craving you have. Plus, it can be done in less than 20 minutes and with one pan, and voila, you have yourself a simple mid-week, paleo-friendly dinner!
Deconstructed Egg Roll
Ingredients
½ small green cabbage, sliced
½ small red cabbage, sliced
2 carrots, shredded
1 small onion, sliced
4 garlic cloves, minced
1 inch fresh ginger, peeled and grated
1 lb. chicken, cut into thin strips
½ cup frozen peas
8 oz mushrooms, sliced
2 tbsp coconut oil
1 tsp toasted sesame oil
¼ cup coconut aminos
2 tbsp fish sauce
Method
Prepare all the vegetables, ensuring that the cabbage is sliced into thin ribbons, set aside
In a large skillet, melt 1 tbsp of coconut and add the chicken strips, stirring until they are cooked thoroughly and are slightly browned
Drain the chicken and set aside
In the same skillet, melt the rest of the coconut oil over a medium heat, add the sesame oil
When hot, add the onion and cook until soft and begins to go translucent
Add the minced garlic and ginger, cook until they start to become fragrant
Add the sliced mushrooms and continue cooking until softened
Add the shredded cabbage and carrots, stirring until wilted and soft, stirring frequently
Return the cooked chicken strips to the skillet, stirring to combine with the cooked vegetables
Add the coconut aminos and fish sauce, making sure to sprinkle it around evenly over the contents of the skillet, stir thoroughly
Once all the ingredients are well incorporated and the vegetables are fully cooked, taste to make any adjustments, adding extra coconut aminos as desired
