Cherry Creamsicles

The summer heat is on, making for a good excuse to experiment with popsicle making! Smooth, pink and creamy, these Cherry Creamsicles are a fun, fruity treat for a hot summer afternoon and refreshing after playing on the slip ’n’ slide all day!
Simple and versatile, this Cherry Creamsicle recipe can be customized to suit your own fruit flavoring preferences. Cherries can be substituted with peaches, strawberries or whatever fruit is in season, or a blend together two or three of your favorites. Just make sure to invite me over, okay?
These homemade Cherry Creamsicles are healthy, dairy free, ridiculously easy to make, and a super-cool afternoon treat that is great for little kids and big kids alike!
Cherry Creamsicles Recipe Ingredients
Makes 8
1½ cups cherries, pitted and chopped (use frozen if cherries aren’t in season)
14oz full-fat coconut cream
1-2 tablespoons raw honey
1 teaspoon vanilla extract
Method
In a food processor or blender, process the cherries, coconut milk, raw honey and vanilla until smooth and creamy pale pink in color
Divide mixture equally into the popsicle mold, insert popsicle sticks
Freeze for 4 to 6 hours, or until completely frozen
When ready to serve, run some warm water along your popsicle mold to loosen the popsicles and eat immediately!
