Grilled Cilantro-Lime Chicken


Well, hello grilling season! I’m sure you’d agree that there’s nothing more mouthwatering than zesty grilled chicken hot off the grill! Grilled Cilantro-Lime Chicken is a classic Southwestern inspired favorite. Its so versatile that it can be enjoyed as is, chopped up and added to a nice, crisp salad, or sliced and served in tortillas with a sizable dollop of guacamole!

Culinary tip: I don’t know about you, but I’ve found that grilling chicken breasts can a challenge! The chicken can end up charred and dry on the outside, while remaining uncooked in the middle. Just recently, I came across a fool-proof means for avoiding this uneven grilling pitfall. Simply cut slits from side to side, across thicker parts of the chicken, slicing only half way through. This allows the chicken to cook faster and more evenly, with the added bonus as infusing more flavor into the meat during marination.

Cilantro-Lime Grilled Chicken Ingredients

  • 2 chicken breasts

  • 1 lime, juice of

  • 1 tablespoon fresh cilantro, chopped finely

  • 1 clove garlic, minced

  • 1/4 teaspoon salt

  • 1 tablespoon coconut oil, melted

Method

  • Add the lime juice, chopped cilantro, minced garlic and salt to a large, ziplock freezer bag

  • With a sharp knife, make several horizontal slits across each chicken breast, making sure to only cut half way through

  • Add the chicken breasts to the the freezer bag, making sure that lime juice and other seasonings evenly saturate the slits in the chicken

  • Remove any excess air from the freezer bag, seal and let marinade in the refrigerator for at least 1 to 2 hour before grilling

  • On a medium grill, cook the chicken for 5-7 minutes on each side, turning occasionally so they don’t burn

  • Serve and enjoy!
