Paleo Ginger Beef with Broccoli


This hearty, paleo rendition of Ginger Beef with Broccoli stir-fry is one that will satisfy even the most picky eater! It has an Asian flavor that everyone loves, with the added bonus of some fresh broccoli and carrots for a splash of color. Best of all, it’s Autoimmune Paleo friendly, with no gluten, no soy and no nightshades!

It’s simple and super easy to put together if you’re feeling a little nostalgic for Chinese take-out, but without all the non-paleo ingredients! Try this one tonight, serving it over cauliflower rice or zucchini noodles, or some white rice for your non-paleo diners.

Ingredients

  • 1 - 1½ lbs grass-fed beef

  • 1 large head of broccoli, cut into small, bite sized florets

  • 2 medium carrots, sliced lengthways

  • 1 tablespoon fresh ginger, grated

  • 1-2 cloves garlic, minced

  • ¼ cup bone broth

  • 5 tablespoons coconut aminos

  • 1 teaspoon fish sauce

  • 1 tablespoon arrowroot flour

  • 2 tablespoons coconut oil

  • 1 teaspoon toasted sesame oil (optional)

Method

  • Prepare the marinade by mixing together fish sauce, ginger, garlic, 2 tablespoons of coconut aminos and sesame oil in a bowl

  • Stir in the beef, let it marinade at room temperature of at least 30 minutes

  • In a separate bowl, make the sauce by combining the bone broth, arrowroot flour and 3 tablespoon of coconut aminos

  • Heat 2 tablespoons of coconut oil in a large pan over medium heat

  • Gently cook the beef, turning every 1-2 minutes or until thoroughly browned

  • Remove the meat and set aside

  • Add more coconut oil if needed, add the broccoli and carrots, stirring for 1 minute

  • Add ¼ cup water and cover the pan, checking occasionally to check tenderness of the vegetables

  • Return the beef to the pan, adding the sauce

  • Stir thoroughly until the sauce has thickened slightly

  • Serve and enjoy!
