Balsamic Roasted Beets

Beets are a unique source of phytonutrients that provide antioxidant, anti-inflammatory, and detoxification support. They are also rich in vitamin C, fiber, and essential minerals such as potassium and manganese.
Roasting balsamic marinaded beets is a delectable way to eat this beautiful ruby-red root vegetable. The balsamic vinegar caramelizes as it bakes, making this a recipe absolutely scrumptious!
Simple to prepare, however, the juice from beets has a tendency to stain anything and everything that it comes in contact with. After peeling and slicing beets, my hands, knife and cutting board look like a veritable blood bath! Fortunately, it washes off pretty easily with soap and water!
Ingredients

6 medium beets
1-2 tablespoons olive oil
2 tablespoon balsamic vinegar
Salt to taste
Method
Preheat the oven to 375 degrees.
Peel and cut the beets into bite sized chunks
Combine the beats, vinegar and salt, and place in a foil lined baking pan, spreading out evenly
Bake uncovered for 45 minutes to an hour, turning the beets once or twice
Test for readiness by piercing the beets with a knife. They should be soft, but lightly crispy and caramelized around edges
Serve and enjoy!
