This is one of those easy, throw-it-in-the-slow-cooker type of dishes that I made one day when we had plans to see the movie Interstellar. If you haven't seen this movie, it is nearly three hours long, so the last thing I wanted to do was to have to prepare a meal from scratch after when I got home. This comforting creation was made it up with whatever items I had in my refrigerator. Many hours later, when we returned home, our dinner was ready and waiting for us! The chicken was so tender it was falling apart and the squash and other vegetables were cooked to perfection! My husband enjoyed it so much that he requested that I make a double batch the next day! By the way, If you still haven't seen it, Interstellar is thrilling, thought-provoking and visually resplendent!
1 lb pastured chicken thighs, skin removed
16 oz butternut squash, peeled, seeded and cubed
4 oz mushrooms, sliced (approx. 5-6 mushrooms)
2-3 large handfuls baby kale
4 cups bone broth
3 cloves garlic, finely chopped
2 teaspoons lovage*
1 teaspoon thyme
1 teaspoon parsley
1/2 teaspoon pink or grey salt
1/4 teaspoon freshly ground pepper
Cut up the chicken thighs into large, bite-sized pieces and place in the slow cooker
Add the butternut squash, sliced mushrooms, chopped garlic, lovage, thyme, parsley and salt and pepper
Add the 4 cups of bone broth
Casually stir all the ingredients, ensuring that everything is intermingled and submerged in the bone broth
Cover and cook on low for about 4-5 hours
Taste for salt and make necessary adjustments
Serve and enjoy!
*Lovage is a wonderful herb that I acquired from my sister-in-law’s garden. It can be used in salads, soups and goes deliciously with poultry! It flavor and smell is somewhat similar to celery. Lovage can also be drunk as a tea, which aids to stimulate digestion. However, if you do not have access to lovage, either fresh or dried, you can replace it with a rib or two of celery, sliced thinly. If you don’t have celery on hand, rosemary or sage would be a nice substitution.
